BUCK'S ITALIAN BURGERS

5-LBS.GROUND CHUCK
5-EGGS
2-CUPS OF ITALIAN BREAD CRUMBS
1-LARGE RED ONION
1-LARGE GREEN PEPPER
1/2-CUP PARSLEY
1-TABLESPOON BLACK PEPPER
1-TEASPOON GARLIC SALT
1/4-TEASPOON OREGAN
1-CUP ROMANO CHEESE
( MAKES 18 QUARTER POUNDER BURGERS )

Margie's Pudding Shots  (adults only)!
1 sm instant jello (chocolate or vanilla) not sugar-free
8oz Cool Whip - keep frozen
¼ cup of vodka
¾ cup of milk

For vanilla, add ½ cup Bailey's
For Chocolate, add ½ cup Kahula

Mix all together and pour ½ way into cups with lids.
Freeze at least 2 hours before serving.
You can get creative and decorate with sprinkles or syrup
Before freezing.

 

Goldberg's Chicken Ciili

3 chicken breasts (app. 1 - 1 1/2 lbs.)
Family-size can of Cream of Mushroom soup
2 - 12oz cans of Great Northern beans (or any white beans)
12oz can of sliced carrots (corn also works)
2 packets of white chicken chili seasoning

That's a small batch - can easily be doubled.

Put soup, beans, canned veggies and chili packets in pot - juice and all. Start cooking on med-low, so it doesn't stick. Bake the chicken coverered - about 30 minutes, then shred (two forks does the trick) and add to the pot.
Cheese, crackers, tortilla chips, sour cream optional.

 

Karen’s Chicken Jalapeno Cheddar Soup

4 large boneless, skinless chicken breasts
2 yellow onions, diced
2 ribs celery, chopped
4 cloves garlic, minced
4 large jalapenos, seeded and sliced
Cajun seasoning
Generous handful chopped flat leaf parsley
Shredded sharp cheddar (several cups)
½ and ½
Chicken stock

Boil chicken until cooked through. Cool and shred. Set aside.

Melt 2-3 T butter in a large pot. Add onions, celery, garlic and jalapenos. Sautee until tender. Sprinkle with salt, pepper and Cajun seasoning. Add 2 – 3 T flour and cook for a minute to make a roux. Add chicken stock and half and half and bring to a boil. Reduce heat and add in shredded cheddar in small batches to melt. Add in shredded chicken to warm through. Add more cheddar, stock or half and half if necessary until you reach the desired consistency. Add in chopped parsley at the end.
